Iced pandan: latte, granita and summer desserts

When the weather warms up, pandan works beautifully in cold drinks and summer desserts. Here are four ways to enjoy its gentle vanilla notes.

Iced pandan latte

A refreshing layered drink.

  • 3–4 g pandan powder
  • 30 ml hot water
  • 200 ml chilled oat or coconut milk
  • Ice cubes
  • Agave syrup, optional

Mix the pandan powder with hot water and let it cool. Fill a glass with ice, add the cold milk, then pour the pandan mixture over it. Stir before drinking.

Pandan granita

A refreshing frozen dessert without an ice-cream maker.

  • 500 ml coconut water
  • 4 g pandan powder
  • 40 g sugar
  • 1 tsp lime juice

Warm a little coconut water to dissolve the pandan and sugar, then mix with the rest. Pour into a shallow dish and freeze, scraping with a fork every 30 minutes for about 3 hours.

Pandan and coconut ice cream

A creamy coconut dessert.

  • 400 ml full-fat coconut milk
  • 100 ml cream
  • 80 g sugar
  • 5 g pandan powder

Warm gently to dissolve the pandan and sugar. Cool and churn in an ice-cream maker. Without one, freeze and blend twice while setting.

Iced pandan frappé

Blend a little pandan mixture with cold milk, ice and a little sugar until slushy.

Serve immediately.

  • Cold temperatures can mute flavour, so adjust the pandan to taste.
  • Dissolve the powder in a little warm liquid before chilling.
  • Coconut milk pairs well with pandan.
